Fettuccine Alfredo
Ingredients
Butter. 4 pats
Heavy cream. 1/2 cup
Egg yolks. 2 each
Fettuccine cooked. 8 oz.
Grated cheese. 3 tblsps
White pepper. Dash
1. Melt butter in pan.
2. Add cream bring to simmer, whisk, reduce.
3. Turn off heat, slowly add egg yolk. Try not to touch side of pan with yolk.
4. Add cooked hot fettuccine.
5. Add cheese and pepper.
6. Toss well. Serve immediately.

Classic Caesar Salad
2-4oz servings
Ingredients
Garlic, large clove, peeled 1 each
Salt. 1 tsp.
Anchovy. 1 each
Dijon mustard 1 tsp.
Olive oil. 11/2 tsp
Wine vinegar. 1/2 tsp
Lemon juice,fresh,strained. 1/4 lemon
Egg yolk. 1 each
Pepper, freshly ground. 4 turns
Romaine,clean, bite sizes. 1/4 head
Croutons.
Grated cheese. 1 tblsp.
1. Season The bowl with garlic using salt as an abrasive.
2. Remove salt and garlic when the bowl is well seasoned.
3. Add anchovy, mash with fork, move to on side. Add mustard.
4. Slowly blend oil into mustard.
5. Add wine vinegar, lemon juice, egg yolk, and pepper. Mix well
6. Add romaine and roll lettuce.
7. Add croutons and roll
8. Add cheese and roll. Serve immediately.
Note: when extending Caesar salad to a large amount, decrease the amount of garlic,
, anchovy and mustard.
